Connie’s Waffles

Ingredients:

Directions:

·         2 eggs

Grease waffle iron with a small amount of melted butter, and heat. In a large bowl, beat eggs and then add the flour, baking soda, baking powder, salt , butermilk, and oil.

Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid, and bake 3 to 5 minutes, until no steam emerges from waffle iron or the light goes off.

For Blueberry Waffles: Spoon 2 tablespoons of blueberries over batter just after it has been poured onto the waffle grid.

For Western Waffles: Top with sweetened strawberries and whipped cream. 

·         2 cups buttermilk

·         2 cups flour  or 1/2 white flour & 1/2 white flour

·         2 teaspoon baking powder

·         1 teaspoon baking soda

·         ½ teaspoon salt

·         ¼ cup plus 2 teaspoons melted shortening or oil
